Sweet Chilli Ham with Thyme and Chickpeas

Yields: 4 servingssweet chilli-ham

  • 1 1/2 teaspoons Vegetable Oil
  • 400 grams Ham Steak; cubed, 1cm
  • 1 small Onion; sliced
  • 300 grams Snake Beans; chopped
  • 1/4 cup Sweet Chilli Sauce Mild
  • 2 tablespoons Lime Juice
  • 2 cloves Garlic; crushed
  • 620 grams Chickpeas; drained, rinsed
  • 2 teaspoons Thyme; fresh, chopped

Heat half the oil in wok. Add ham in batches, stir-fry until lightly browned, remove. Heat remaining oil in wok, add onion and beans, stir-fry until onion is just soft. Add ham, sauce, juice, garlic, chickpeas and thyme, stir until hot.

Note: Ham, sauce, juice and garlic can be marinated in refrigerator up to 24 hours.
