Schopska Salat

Servings: 4

  • 500 g tomato, diced
  • 500 g telegraph cucumbers, peeled, diced
  • 4 onion, finely chopped
  • 300 g capsicum, finely chopped
  • 1 chilli, chopped
  • 2 tbs vinegar
  • 5 tbs oil
  • 1 clove garlic, minced
  • salt
  • pepper
  • parsley, chopped
  • 75 g cheese, grated

Combine all ingredients except cheese and mix well.
Sprinkle cheese (sheep cheese if available) on top and serve with white bread.

 

Author Notes:
Schopska Salad was named after the farmers living around Sofia in Bulgaria. A classic summer salad.
