Schopska Salad
Schopska Salat
Servings: 4
- 500 g tomato, diced
- 500 g telegraph cucumbers, peeled, diced
- 4 onion, finely chopped
- 300 g capsicum, finely chopped
- 1 chilli, chopped
- 2 tbs vinegar
- 5 tbs oil
- 1 clove garlic, minced
- salt
- pepper
- parsley, chopped
- 75 g cheese, grated
Combine all ingredients except cheese and mix well.
Sprinkle cheese (sheep cheese if available) on top and serve with white bread.
Author Notes:
Schopska Salad was named after the farmers living around Sofia in Bulgaria. A classic summer salad.
