Bread Soup with Apple and Plum

Brotsuppe mit Äpfeln und Pflaumen

Servings: 4

  • 4 slices dark bread, chopped
  • 4 apples, cored, chopped
  • 250 g plums, halved
  • 100 g sugar
  • 1 lemon
  • 1 clove
  • salt
  • 1250 ml water
  • 125 ml white wine
  • 2 Tbs butter
  • cinnamon

Boil bread, plums, apples, sugar, cinnamon, some lemon rind, clove and a little salt for about 20-25 minutes. Keep some apple and plum for garnish.
Strain through a coarse sieve or use a Bamix, reheat.
Add wine and lemon juice to taste.
Melt butter and fry the remainder of apple and plum, add to soup and sprinkle with sugar and cinnamon.
